Darcy Driedger is a food scientist who has worked extensively in the interface between crop production and food processing.  He was with Alberta Agriculture and Forestry for 20 years, first as a food scientist, and then as Director of the Crop Diversification Centre South.  Over his career, has worked for a wide range of food and agricultural companies, from start-ups to large multi-nationals, crop producer organizations and funding agencies.  Much of his research and product development focussed on potato, barley and pet food processing.
